1. In a bowl beat the butter, sugar and egg yolks together until smooth. Then, add the brandy, milk and flour.
2. To make the filling, put in a bowl the ground almonds and nuts, sugar and cinnamon and blend them. Add the 4 egg whites plus 4 more whole eggs add blend the mixture again. Add the lemon zest.
3. Place the dough in the cases and then spoon the filling mixture into the cases.
4. Bake for 30 mins until golden brown. Leave to cool completely on a wire rack.
