Method

Cut the pork, peppers, tomato, garlic and cheese into small pieces.
Spread all ingredients in cooking parchment, add salt, pepper, boucovo pepper, oregano and olive oil and mix well.
Then wrap the cooking parchment and put in the oven starting at 180°C and then lowering to 150°C for 3 -4 hours.

Ingredients

  • 1 kg pork (half kilo rump and half a kilo neck).
  • 3 garlic cloves
  • a green and a red pepper
  • diced Serifos cheese 200gr
  • 10th FESTIVAL OF CYCLADIC GASTRONOMY NIKOLAOS TSELEMENTES
  • 1 tomato
  • salt - pepper – “Boukovo” (red chilli pepper fl akes)
  • a little of oil and oregano
