Preparation of the”Strapatsada”.(something resembling to scrambled eggs,no butter,with grated tomato).After we have already grated the tomatoes we put them into a frying pan without any oil to slowly cook it in order to loose most of its liquids,add the(beaten) eggs,salt pepper,mint(preferably fresh)and poor it over the sliced eggplants along with the grated dry cheese.
