Lay the fava on a hat surface and inspect for small stones. Once you have removed the stones, rinse fava beans under cold water.
Place in pot with water and bring to boil. Using a spoon, skim the foam from the surface of the water.
Once this is done lower the heat, add salt and the whole onion. Add as much warm water as needed.
Stir with wooden spoon. When the fava beans have turned into a smooth cream it is ready to be served!
Serve with olive oil, chopped onion, lemon and capers.
